Pumpkin Muffins (yield: 2 dozen)

3 eggs
3-1/2c sugar
3/4c oil
2c pumpkin
Beat together then stir in dry ingredients

Sift together:
3-1/2c flour
2t baking soda
1/2t baking powder
1-1/2t salt
1-1/2t cinnamon
1/2t nutmeg
1/4t ginger

Using 1/4c size muffin scoop, scoop batter into well greased
muffin tin or into paper muffin cups. Bake at 375 degrees for 25 minutes.
